Cupping, in simple terms, is coffee tasting – and, much like wine tasting, is the practice of observing the tastes and aromas of brewed coffee. While it’s regarded as a professional affair, there’s nothing snooty about it: it can be done by anyone who loves drinking coffee. Practitioners who regard cupping as serious business (and are trade professionals) are known as Master Tasters.

A standard cupping procedure involves deeply sniffing the coffee, then loudly slurping it to make sure it spreads around the mouth and especially to the back of the tongue. By doing this, the coffee taster attempts to measure all the aspects of the taste, specifically the body (the texture, or what they refer to as mouthfeel), sweetness (determined by the sides of the tongue), acidity (a sharp, tangy taste at the tip of the tongue), flavour (the character of the brew), and aftertaste. Because coffee beans are inclined to embody definite tell-tale flavours from whatever region in the world they are grown, cuppers may try to identify the coffee’s origin.
